The summer season is predictably unpredictable with high levels of rainfall and a high risk of hurricane activity. Between May and October temperatures steadily rise, reaching their peak in July and August with an average temperature around 28°C. Temperatures can get into the 30s and with increased humidity it can all get a little too sticky for some visitors. Rainfall increases seeing two definite peaks in June and October. This rain is not to be laughed at. It is no mere spittle but an opening of the heavens with fantastic lightning displays, earth-shaking thunder and rain so thick it can feel like a wall of water. Good luck with your umbrellas and plastic macs. Even more serious are the hurricanes. In the Gulf stream, with their east side to the Atlantic, the Bahamas are right in the path of these devastatingly destructive tropical cyclones. Most hotels are solid enough to withstand these storms, but still receive superficial damage. Of course, it is not all bleak in the Bahamian summertime. Many are happy to compromise with a few days of rain in May and July for temperatures in the mid to high 20s. Rain is often short-lived, and the hurricane season, starting in June, does not reach its peak until October.

..and this is what I had for supper at my hotel tonight -only one complaint .. nit enough rum ! hic -hic - hic

The Bermudian Cooks: Black Seal Rum Chocolate Black Cake

In the Caribbean, a black cake is a dark, gingery fruitcake. This version; however, is a fruity, rum and chocolate cake.

Chocolate lovers with a taste for high-end rums (which mimic superior brandies) will find great satisfaction in blending the two. Trendy pairings of such rums and boutique-style chocolate bars have become legendary for some foodies. The two are a magical mix - and the combination is one of the Caribbean's greatest gifts to the culinary world.



Ingredients:

1 cup dates, chopped

1 tsp. baking soda

¾ cup boiling water

2 tsp. Gosling’s Black Seal Rum

1 tsp. vanilla extract



½ lb unsalted butter

1 cup sugar

3 eggs



2 cups flour

½ cup cocoa

1 tsp. baking soda

½ tsp. salt

½ cup semi-sweet chocolate chips

½ cup brown sugar

½ cup pecans, chopped

½ cup Gosling’s Black Seal Rum



For the Garnish:

Confectioner’s sugar

1 pint or more fresh raspberries or berries of your choice



Directions:

Grease and flour the Bundt or rube pan. Mix together the pecans and brown sugar and sprinkle into the pan. Plunge the dates into the boiling water, remove from heat and add the baking soda, Gosling’s Black Seal Rum and vanilla. Allow to cool while you cream together the butter and sugar until light and fluffy. Add eggs one at a time.

Mix together the flour, cocoa, baking soda and salt. Add this mixture and the date water mixture alternately into the butter and sugar, beating all the while. When all is incorporated, fold in the chocolate chips. Spoon the thick batter into the pan and bake in a pre-heated 350-degree oven for 1 hour or until the tester comes out clean.

Allow to cool for 10 minutes before inverting on to a wire rack. While still warm, and upside-down, give it a good dousing of Gosling’s Black Seal Rum. Invert, allow to cool about 5 more minutes before attempting to ease off the pan. When Completely cool, douse again with rum. You may service it now, or even better, refrigerate overnight or longer. Sprinkle with even more rum before serving. It should become fudge-like, not wet. Dust with powdered sugar ‘snow’ and fill the centre with fresh raspberries for a dramatic flourish.

I have my sun block on (factor 50) I asked the chap at the cabana to put it on! x90m

fresh p inapplicable and tropical fruits in a bowl too would be nice.

anyone what their sun block on their back? I know a good person to do it!

The pineapple industry was important in the late 19th century. Indeed, it is believed that the Bahamas was the first country to produce pineapple on a commercial scale. The pineapple grew in the Bahamas from the early 1700s but was not exported on a large scale until 1844. During that year, it is believed that upward of 15,000 dozen were shipped to England with their roots, in addition to cut pineapples to the United States.

In 1845, Eleuthera was the premier growing island. In that year, more than 35,000 dozen were shipped to England and the same amount to the United States.

A Pina Colada recipe!


120ml pineapple juice
60ml white rum
60ml coconut cream
wedge of pineapple, to garnish (optional)

Pulse all the ingredients along with a handful of ice in a blender until smooth. Pour into a tall glass and garnish as you like.

I had the jerk chicken for dinner tonight in the hotel, that's the dish for you if you like a bit of spice in your life!!!

here is the recipe

4 large chicken legs, skin on, cut into drumsticks and thighs and scored
Olive oil, for frying
2tbsp Worcestershire sauce
Rice, to serve
4–5 thyme sprigs, to garnish (optional)

For the marinade

1–2 chillies, deseeded and finely chopped
2 garlic cloves, peeled and crushed
1tsp ground cloves
1tsp ground cinnamon
1tsp ground nutmeg
2tsp ground allspice
5–7 thyme sprigs, leaves only (you will need about 2 tbsp)
Freshly ground black pepper
Olive oil

Method


1First prepare the marinade by combining all the ingredients with a good grinding of black pepper and a dash of oil. Rub the marinade into the chicken pieces, massaging it into the scored meat. Leave to marinate for at least 1 hour (or, better still, overnight).
2Preheat the oven to 220°C/425°F/Gas Mark 7.
3Heat a large ovenproof pan over a medium-high heat and add a dash of oil. Fry the chicken pieces for about 10 minutes until golden brown on all sides. Add the Worcestershire sauce and cook for 2 minutes.
4Cover with an ovenproof lid or foil and place in the preheated oven for 20 minutes until cooked through (if your pan isn’t ovenproof, simply transfer the chicken to a roasting tray). Remove the foil for the last 5 minutes if the chicken needs colouring a little more.
5Serve the chicken hot with rice

Bahama Mama Cocktail

¾ oz. Bacardi Gold rum

½ oz. Nassau Royale Liqueur or Grand Marnier

½ oz. Cointreau

2 oz. orange juice

1 dash of Angostura Bitter, ½ oz. Grenadine, ¼ oz. lemon juice

Shake well with cracked ice. Garnish with orange slice & cherry.
