We had liver bacon and onions, mash, carrots and cabbage, &berries and yoghurt for afters

What is quinoa? Heard of it but not tried it. We had spaghetti with meatballs. Very yummy

An introduction to quinoa

Quinoa, pronounced ‘keen-wa’ is a great wheat-free alternative to starchy grains. There are two types: red and creamy white. Both types are slightly bitter when cooked and open up to release little white curls (like a tail) as they soften.

Grown in South America (Peru, Chile and Bolivia) for thousands of years, quinoa formed the staple diet of the Incas and their descendants. In recent years, foodies in the UK and the US have heralded it as a superior alternative to bulgur wheat, couscous and rice. Though it often occupies a similar role to these grains in dishes, quinoa is actually in the same family as beets, chard and spinach.

Tonight for tea I did roasted young beetroots with baby sweetcorns.
I had a Linda McCartney cheese patty and had some cooked new potatoes which I mashed with mayanaise and had cold.
It was delicious.
What did you have?

I've never tried Sea Bass, but I love Shark and Swordfish - OMG this is making me feel hungry. I've got steamed cod and mashed potato. I'm on a special diet for 2 days then got hospital tomorrow, and can't eat before I go up there. Can't wait till tomorrow afternoon - today I treated myself to some custard tarts, raspberries and strawberries - roll on tomorrow!

I did afternoon tea for mum and I, consisting of egg sandwiches, cheese & tomato sandwiches and cream cheese with smoked salmon. Crisps, little squares of quiche and finally fresh cream victoria sandwich cake.

I picked some brocolli out of the garden and made a cheese sauce with it, it was delicious.
then had strawberries from the garden, with yoghurt.

tonight this is what we had, and I wanted to share with you because it was delicious

Serves: 2
Preparation: Approx 10 minutes
Cooking time: Approx 5 minutes

Ingredients

125g can Princes Mackerel Fillets in Olive Oil
4 rashers streaky bacon, snipped into pieces
2 tbsp lemon juice or cider vinegar
Salt and freshly ground black pepper
1 small bag mixed salad leaves
4 spring onions, thinly sliced
3 tomatoes, sliced into wedges
1 large ripe avocado, pitted, peeled and sliced

How to make it

1. Drain the olive oil from the can of Princes Mackerel Fillets into a salad bowl. Break the fish into chunks and set aside.

2. Dry fry the bacon bits in a non-stick frying pan until crisp.

3. While the bacon is cooking, mix the lemon juice or cider vinegar into the olive oil, adding a pinch of salt and pepper.

4. Add the salad leaves, spring onions, tomatoes and avocado to the salad bowl, tossing gently to coat with the dressing. Serve, topped with the chunks of mackerel and hot crispy bacon bits.

That looks delicious Wendy, I am going to Booths this wk, &was intending to get mackerel , so will try it
