Curried Parsnip Soup

Last week our carer , Colin brought us some home-made soup . When he said it was parsnip, I was reluctant to try it as I have always found it far too sweet. However, it was delicious, so he gave me the recipe
10oz parsnips
1 potato
1 carrot
1 onion
Tbsp olive oil or 1oz butter
2 tbsp. mild curry powder
1 tbsp. flour
2pts veg stock
plain yoghurt
Roughly chop all root veg & chop onion.
Saute onion in the oil until softens. Do not brown.
Add veg and stir in flour and curry powder & cook 2 mins stirring.
Add stock , bring to boil & simmer 40 mins.
Liquidise
Stir in some plain yoghurt to serve
Freezes well
