Blackberry Gin

This recipe can be used for most berries

!lb blackberries
1/2lb sugar
bottle gin

Wash blackberries, place in a 11/2 ltr Kilner jar. Add the sugar, pour in the gin
Screw lid on tight and shake well.
Place in cool dark cupboard ad leave for about 4 weeks, giving the jar a good shake every few days or so.
Sterilise your bottles.
Strain the liquor overnight in a jelly bag, or through some muslin( don't squeeze to hurry the process as this will make the liquor cloudy. )
When finished dripping, pour into sterilised bottles and stopper tightly.
Store cool and dark

Will keep 6 -12 months

raspberry gin - as above

sloe gin
After washing sloes, prick them all over with a needle & then as above

Rosehip gin
after washing, top & tail & cut in half then as above
