I used to have a little cookery book I got in Guernsey with a recipe for quick and easy pizzas. It seems to have vanished to wherever missing cookery books go to so I Googled "quick and easy pizzas" and found this one on the BBC Food page ... very quick to do, and very easy to make, though this is a veggie pizza you can use whatever fillings you like .. I made double the amount of dough, one tin of chopped toms instead of passata as way cheaper, got grated cheese from Aldi, no Parmesan (added expense) ... I did add some mixed herbs to the flour etc before mixing in the water

Method
Heat oven to 240C/220C fan/gas 9. Oil a 20 x 24cm baking tray.
Mix the flour, yeast, ΒΌ tsp salt and the sugar in a bowl, then stir in the water.
Bring the mixture together, knead until smooth, then press into the oiled tray.
Spread passata over the dough, leaving a thin border round the edge.
Season the passata, then sprinkle with the chopped basil, the mozzarella and the Parmesan, and bake for 15-20 mins or until cooked through.
Scatter with the remaining basil and serve with a side salad.
The trays I used were approximately 38/39cm sqaure to give you an idea of the size of the pizzas, which I have cut into four and frozen
