Cheddar Walnut and Apple Loaf

I made this for the 1st time yesterday & it is delicious

6oz SR flour
4  1/2oz butter(chilled and diced)
1  3/4oz chopped walnuts
1  3/4oz bran flakes  ( slightly crushed) -  I used porridge oats in place of bran
4  1/2oz cheddar cheese (grated)
1 eating apple,  peeled, cored and coarsely grated
3 eggs, lightly beaten

1oz grated cheddar for topping

Heat oven 180C/160fan/gas4, grease & line 1 lb loaf tin.
Sift flour and rub in diced butter until  like coarse breadcrumbs, add walnuts, bran flakes, apple and cheese & mix well. Add beaten eggs & stir until well blended.  Turn out into loaf time and sprinkle top with 1 oz cheese. Cook 45 - 50 mins  until golden and skewer inserted into centre of loaf  comes out clean. Cool 20 mins in the  tin  then turn out onto wire rack. When cold ,wrap in foil & eat within 2 days. Will freeze.

I sliced the whole thing up Wendy, left a couple of slices out , put the rest in the freezer, so I can get it out 1 slice at a time, as I want it, I do that with most of my baking, as it stops me eating too much as well as keeping it fresh!lol

Mmm I may try this but will have to omit the nuts, I should think adding extra bran instead will work?

Sandra you could add dried fruit instead of the nuts

gpr  I love walnuts but I believe sultanas would be a good alternative to nuts.    w09
