Chicken Jambalaya

This spicy chicken recipe is a quick and easy option for a midweek family dinner.


Ingredients
•1 onion, diced
•50g (2oz) chorizo, chopped
•500g (1lb 2oz) chicken breasts, cut into pieces
•1tbsp Cajun seasoning
•1 green pepper, roughly chopped
•1/2-1 green chilli, deseeded and finely chopped
•350g (12oz) long grain rice
•800ml (11⁄3 pint) chicken stock
•400g can tomatoes
•Chopped parsley, to garnish


Method

Fry onion and chorizo until cooked through, about 8min. Add chicken, cook for 8min. Stir in Cajun seasoning, pepper and chilli, cook until softened. Add a little water if the pan looks dry.

Stir in rice, stock and tomatoes. Bring to boil, cover and simmer for 20-25min until rice is cooked through. Garnish and serve
