Bit late, but my friend is now into baking and makes a very "mean" Victoria sponge, we met up for a coffee at the weekend and she gave me a huge chunk to take home... apricot filling .. yum!

I would have a lovely slice of my mums fruit cake. it is very rich and comes out on special occasions.
